Protein Breakfast, the Maya Way!

If you are like me and really do best with protein for breakfast in the morning, you may want to try this fabulous black bean soup.  I am currently in Belize teaching and it is often the case that the local people here will eat beans for breakfast.  Even bean soup!  The following recipe is really amazing and can be made ahead of time.  It often can last a week in the refrigerator, and thus be re-heated each morning.  I had this for breakfast last week and it really energized my days!

Protein Breakfast

1 pound of black beans: Sort beans (dry beans often need to be sorted as they can have gravel in with them)

2 quarts water

1 large onion chopped

4 cloves garlic


2 Tblsp oil (coconut oil is terrific here but can use any you like)

1 red or green sweet pepper

½ tsp chili powder

1 Tbsp cumin powder

1 Tbsp oregano

Sour cream, Grated cheese,  & Chopped chives or cilantro for serving

Rinse and soak beans overnight in cold water–strain in morning and add fresh cold water to cover– boil slowly for about 2 hours  with a slice of onion and a clove of garlic -– add more HOT water as needed (never add cold water to already boiling beans)–if desired add salt when beans are half done–when beans are softened remove half and blend at medium speed– return blended beans to pot–sauté remaining garlic and onion, sweet pepper, and chili powder in oil for a few minutes–add cumin and oregano, sauté 3 more minutes- add the sauté mixture to the beans and boil another 30-45 minutes

Serve with a dollop of sour cream, grated cheese, and or chopped chives or cilantro….. add hot sauce to taste if desired
